Tomasu has grown its own soy beans and wheat in the Hoeksche Waard. These ingredients are combined with spring water and natural coarse grey sea salt, harvested in Bretagne, France. The fermentation is started by the addition of Tomasu's own fungus, Aspergillus Oryzae Tomasu. The only ingredient that is added afterwards is time.
Sweet Soy Sauce
This sweet soy sauce is a combination of Tomasu's signature soy sauce and sugar, extracted from locally harvested sugar beets. Creating an exciting balance of salty and sweet. When combined, these two seemingly contradictory tastes create a unique interplay that heightens the more subtle tastes and brings new complexity to the dish.
Sweet Spicey Soy Sauce
This sweet & spicy soy sauce is flavored with sugar, extracted from locally harvested sugar beets, sesame seeds and Madam Jeanette peppers. Using Tomasu's signature soy sauce as a basis, the heat is softened, allowing the taste of the pepper to be better recorded and appreciated.
